Dad's Favorite Meatloaf    Chef

Oh yes, the dreaded meatloaf.  Bane of the working man and joke for the cooking club.  But like fruitcakes, meatloaf is what you make it, or how you make it.   Hope you enjoy my own concoction for this loaf of famous mystery meat.  Enjoy!

2 Tbl olive oil
1 small onion, chopped fine
2 pounds ground beef
1 egg, well beaten
2 slices white bread, torn into small pieces
1/4 cup tomato soup
1/2 tsp chili powder
2 Tbl Worcestershire Sauce
Salt and pepper to taste

Preheat oven to 350°F.  Lightly grease a loaf pan.

In a saucepan, add olive oil and onion.  Sauté until golden brown, about 5 minutes.  Drain well.

In large bowl, mix all ingredients, including onion, until well blended.  Turn into loaf pan.

Bake, uncovered, until meat thermometer inserted in center of loaf registers 160°F and meat is no longer pink; about 1 1/4 hours.

Serve with mashed potatoes and sugar snap peas for a real comfort food festival!
