Basic Barbecue Sauce bbq.WMF (29572 bytes)

A traditional sauce that has a nice balance of sweet, tart with a touch of spice.  When grilling, put the sauce on during the last 5 to 10 minutes of cooking.  With sugar in the sauce, it may burn so just put a pitcher of warm sauce on your table for extra flavor.  Enjoy!

3 Tbl vegetable oil
1 onion, chopped fine
2 cloves garlic, chopped
1 1/4 cups catsup
1/3 cup cider vinegar
1/2 cup Worcestershire sauce
1/3 cup brown sugar
2 tsp chili powder
1/4 tsp cayenne pepper

Heat the oil in a medium saucepan and cook the onion and garlic gently for about 10 minutes.  Add the catsup, vinegar, Worcestershire, brown sugar, chili powder and cayenne and mix well.  Let simmer for about 20 minutes, stirring occasionally, until slightly thickened.
