White Clam Sauce

 

Pour this freshly made sauce over your favorite spaghetti or linguini.  Enjoy!

4 Tbl butter
1/2 cup flour
2 tsp minced garlic
2 cups clam juice
2/3 cup milk
1/4 cup chopped parsley
1 cup minced fresh or canned clams

Melt the butter in a sturdy heavy sauce pan.  Stir in the flour and blend over medium heat until smooth.  Stirring continually, continue to cook for about 2 minutes.  Add the garlic and clam juice, stirring continually, until thick.  After coming to a boil, reduce heat and cook about 2 minutes more.  Add milk, parsley and clams, stirring to blend and heat thoroughly.  Add salt to taste, if desired and pour over your pasta.
