Tartar Sauce  Fish with Tartar Sauce

Whether you're serving fish or any other type of seafood, this simple yet tasty tartar sauce will be a wonderful accompaniment and not overpower your main course.  Of course, a home-made sauce will much better and worth the effort than anything from a jar.  Enjoy!

1 cup mayonnaise
1 Tbl minced scallions, white and part of the light green
1/2 cup finely chopped dill pickles
1 Tbl sugar
1/8 tsp lemon juice
1/8 tsp vinegar
1/8 tsp cayenne pepper

Combine all ingredients in a bowl and stir well until completely mixed.   Refrigerate until ready to use and serve chilled.
