Prunes
Prune Whip

What a different dessert or palate cleanser.   This is my cousin Patty's version.  Enjoy!

Your Host,  Brad


3 egg whites
Pinch of salt
1/4 cup sugar
3/4 cup stiff prune purée
1/4 tsp grated lemon rindLemonwedge.gif (16247 bytes)

Beat egg whites until stiff; add salt and gradually beat in sugar until very stiff and smooth.  Fold in the chilled prune purée and grated rind carefully, leaving the mixture looking streaked.  Serve chilled.
