Make your Pesto immediately before serving for a fresh and extremely satisfying sauce.  Served over a bed of hot spinach linguine or regular spaghetti, the flavor becomes intense to the taste and smell.   Serve with a loaf of crusty bread and everyone will be satisfied.  Enjoy!

2 oz fresh basil leaves
2 garlic cloves
1 oz pine nuts
4 Tbl extra-virgin olive oil
4 Tbl freshly grated Parmesan cheese
Salt

Combine the basil, garlic, and pine nuts in a food processor or blender and reduce to a puree.  If you have a mortar and pestle, even better.  With the machine running on low, add the oil slowly.  when the mixture is well emulsified, add the cheese and blend briefly.  Taste test.  Toss with freshly cooked pasta and serve.
