This different, and delicious, dessert will even have a bunny hopping!  Put a dollop of whipped-cream or lemon sauce on top and Enjoy!

Your host, Brad

1 1/2 cups all-purpose flour
1 tsp salt
3/4 tsp cinnamon
1/8 tsp cloves
1/4 tsp nutmeg
1 1/2 tsp baking powder
1/2 cup shortening
1 cup brown sugar, packed tight
1 cup grated raw carrot, packed tight
1 1/2 cups chopped apple
3/4 cup currants (optional)

Stir together flour, salt, spices and baking powder and mix fine.  Cream shortening with mixer and blend in sugar, a little bit at a time.   Add carrot, apple, and currents and mix thoroughly.  Add flour mixture slowly, mixing well until blended.

Turn into buttered ramekins and bake in a moderately slow oven, 325° for 50 minutes.

Makes 8 to 10 servings.
