Light and Fluffy Blueberry Waffles

 

waffles2.jpg (32127 bytes)These sweet and delicious waffles take a bit more time to prepare, but once they melt in your mouth, and the blueberries release their deliciousness, you will know it was more than worth it.  Enjoy!

Your host, Brad

1/2 cup fresh blueberries (frozen is fine, too)

2 cups all-purpose flour
3 tsp baking powder
3 Tbl sugar
1/2 tsp salt

3 eggs, room temperature (separated)
1 3/4 cups milk
1/2 cup butter (1 stick), melted

Wash, drain and dry the fresh blueberries.  Sift all dry ingredients together; stir well with a whisk and then resift.  Beat the egg yolks until lemon colored, add the half and half and butter and blend well.

Add the liquid ingredients to the dry and combine lightly.

Beat the egg whites until stiff and gently fold into the batter.   Lightly fold in the blueberries, creating blue streaks in the batter.

Bake in a waffle iron and top with a pat of butter and fresh blueberry compote, corn syrup or pure maple syrup.
