Wild Rice and Mushroom Stuffing       Boy and Turkey

Here is a different stuffing recipe, used mainly for game birds, that you'll really delight in.  Enjoy!

1 cup wild rice
4 Tbl butter
2 cups chopped fresh mushrooms
1 small onion, finely chopped
1/4 tsp freshly ground pepper
1/4-1/3 tsp ground nutmeg
Salt to taste

Using a deep, heavy-bottomed pot, bring to a boil 2 cups of water and 1 Tbl butter.  Add the rice slowly so that the boiling doesn't stop.  Cover and simmer without stirring and don't remove the cover for 20 minutes.  Check after the 20 minutes; the rice should be just soft and the water absorbed.

Melt the butter in a saucepan, add the mushrooms and onion, and cook over low heat until soft.  Toss in the rice with the pepper, nutmeg and salt.   Stuff turkey, goose or your favorite bird and cook according to the bird's instructions.  When done, remove stuffing immediately and keep warm.
