This appetizer will sure to please anytime of the
year. The tartness of the vinegar and lemon is subdued by the natural sweetness of

1 1/2 pounds fresh mushrooms
3/4 cup olive oil
1/3 cup wine vinegar
3 Tbl lemon juice
4 tsp chopped chives
1/4 cup chopped parsley
1 1/2 tsp tarragon
1 1/2 tsp salt
1/2 tsp ground black pepper
2 tsp honey
Wipe mushrooms with damp cloth. Set aside.
Mix all ingredients well, except mushrooms and
parsley sprigs, and pour over mushrooms. Cover and chill for several hours
(overnight is best). Stir occasionally.
Drain before serving and garnish with parsley
