EVAPORATED MILK
GRIDDLE CAKES

These are the lightest, best tasting pancakes you'll ever eat (grandiose, no?)  Well, they are reeeealy good.  Enjoy!

1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
2 tsp sugar
1/4 cup shortening
1/4 cup boiling water
1 egg, beaten
3/4 cup evaporated milk

Stir flour with baking powder, salt and sugar.  Melt shortening n the boiling water and stir into the beaten egg.  Add milk, stir and add all at once to the flour mixture, stirring briskly until well mixed.  Cook on a moderately hot, slightly greased griddle.  Makes about 20 pancakes (but small ones; these make us about 12 good size ones!).
