Cranberry and Orange Relish       oranges.jpg (8333 bytes)

While some folks like regular cranberry jelly, others like the texture and flavor of a wonderful relish.  Here is a recipe from a neighbor of mine, Gail Mazorrus, that pleases the senses and is a wonderful accompaniment to your favorite poultry.   Enjoy!

1/2 pound (2 cups) fresh cranberries
1 small orange
1/4 cup sugar

Wash the cranberries.  Cut the orange, in quarters and then quarter again, remove the seeds but do not peel. 

Chop 1/3 of the cranberries and oranges in a food chopper or in a food processor.   Continue with the other 2/3's, 1/3 at a time.  Add the sugar and stir well.  Let stand at least 20 minutes before serving but overnight is best.
