BOUQUET GARNI  bouquet_garni.jpg (13661 bytes)

Bouquet Garni is the French term for a bundle of herbs.  In a classic Garni, as below, remember that the larger the garni, the stronger the flavor so don't use too much and overpower a small sauce or not use enough and lose its' effect on a large pot of soup.

Your Host, Brad

For an average size pot of soup or cooking a game hen:

1 small bay leaf or branch of fresh
3 sprigs of parsley
1 small sprig of thyme

Tie the herbs together or you can combine the herbs in a piece of cheesecloth which is then gathered and tied.  Drop into your soup, stock or other culinary desire and remove after cooking.
