Today's special; Banana Cream Pie!  Make sure you leave room for this tasty dessert treat.  Enjoy!

1 9-inch pie crust

1 cup milk
1/2 cup sugar
3 Tbl flour
1/8 tsp salt
2 egg yolks, lightly beaten
1 large banana
2 Tbl lemon juice

j0095678.gif (1228 bytes)Heat the milk in a heavy-bottomed pot until very hot but not boiling.  Mix the sugar, flour, and salt together in a bowl, stir in the hot milk, and beat until well blended.

Pour back into the pan and continue to stir vigorously over low heat for 4 to 5 minutes, until very thick and smooth.  Add the egg yolks and cook for a few more minutes.  Remove from stove and cool, stirring from time to time.

While custard is cooling, mash the banana and beat until smooth.  Add the lemon juice.  Once the custard is cooled, add the banana mixture and fill pie crust.   Refrigerate.  Makes enough for a 9-inch pie.
