Avocado Dressing   Avocado.WMF (1674 bytes)

A rich and creamy dressing for your next salad.  You can also use this as a dressing for your fruit salads, especially citrus salads.  Another proof that Avocado isn't just for Guacamole!  Enjoy!

Your Host,  Brad

2 medium avocados, pitted, peeled and pureed
1 1/3 cups sour cream
1 tsp salt
2 Tbl fresh lemon or lime juice
1 tsp finely mined scallions
1 Tbl minced fresh chervil or tarragon
1/8 tsp hot red pepper sauce

Mix all ingredients, cover, and refrigerate until ready to serve.

Whisk well and use to dress salads of mixed greens or fruits. (If using for a fruit salad, omit scallions)
