CUCUMBERS WITH SOUR CREAM

Val says that they enjoy the onion as much as the cucumbers in this recipe, so don't be afraid to add more onions!

2 Cucumbers
1 Tbl salt
1 sweet onion (Vidalia type)
8 oz. sour cream
2-4 Tbl. Vinegar
Salt and Pepper

Slice the cucumbers into 1/4 inch slices.  Toss with 1 Tbl salt to get the water out of the cucumbers and set aside.  After about 15 minutes, drain the cucumbers.

Peel and slice onion into small rings, then slice into strips.  Add to cucumbers.  Pour vinegar over all and let soak a few minutes.   Combine with sour cream, add salt and pepper to taste and chill.  Serve cold as a side dish.

A pinch of dill adds great flavor.
