Carrot Sandwiches (yes, really!)

This is a recipe born out of the 1930's, when budgets were stretched to the breaking point, but still makes a surprisingly good sandwich.  Use good quality carrots as the taste depends on them being fresh and juicy.

 

3 large carrots, peeled & coarsly grated or shredded

1/4 cup minced walnuts (or pecans, or toasted sunflower seeds, lightly chopped)

6 to 8 stuffed green olives, minced (or dill pickles, but I like the olives better)

1 minced green onion, including top, or 1 tbsp. minced regular white onion

dash salt, dash nutmeg  (don't omit the nutmeg, it really helps the flavour)

1/4 cup good quality mayonnaise, or more, to taste

Mix everything well and spread between slices of bread.  For some reason, this really tastes best on whole wheat rather than white bread. 

You can add some lettuce, or alfalfa sprouts though the original recipe didn't mention them.
