Lazy Cabbage Rolls

1 to 1&1/2 lbs. ground beef, lean

1 medium onion, chopped coarsely

1/2 smallish head cabbage, coarsely shredded

1 quart canned tomatoes (home-made tastes best, of course, but store-bought will do)

1/2 tsp. dried basil (optional, but good; this is my addition & was not in the original recipe))

1/4 tsp. celery salt

1 tsp. salt, dash of pepper

3/4 cup rice, uncooked

 

- Brown meat and onion in frying pan.  Put in a 3-quart casserole dish with lid.  Sprinkle with the rice.  Cover evenly with the cabbage.

- Put tomatoes and remaining ingredients in the frying pan and heat to boiling, mashing the tomatoes and stirring to dissolve the brown bits from the meat into the sauce.

- Spoon sauce evenly over the cabbage, cover dish and bake in 325 degree oven for about two hours, until cabbage is soft.

- Let stand 15 minutes or so after removing from oven, for juices to set.  Serve for supper with fresh biscuits and pickles.  Even better the next day.
